Banana & Chocolate Semifreddo – Semifreddo med smak av Banan & Choklad

This semifreddo is one of the easiest desserts to make! The base only calls for three ingredients. Into this batter I mixed in 4 bananans and a half dark chocolate bar, and made a chocolate crust. Topped with raspberries and strawberries the result was delicious! If you’re not too fond of banana, you can really mix anything you like into the batter – whatever you like will work!

Recipe / Recept

Crust / Botten

1 package of double chocolate chip cookies / 1 paket chokladkakor

1 stick of butter / 100 g smör

Batter / Smet

2 cups of whipping cream / 5 dl grädde

3 egg whiter / 3 äggvitor

0.8 cups of sugar / 2 dl socker

4 bananas / 4 bananer

1/2 dark chocolate bar / 1/2 mörk chokladkaka

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Mix cookies and melted butter. / Mixa kakor och smält smör.

3. Push the dough out into a spring form. / Pressa ut degen i en springform.

4. Bake for 8 min. / Grädda i 8 min.

5. Whisk the egg whites to a hard foam. / Vispa äggvitorna till ett hårt skum.

6. Whisk the cream. / Vispa grädden.

7. Mix egg whites, cream and sugar. / Blanda ägg, grädde och socker.

8. Chop the chocolate and mix in mashed bananas and chocolate. / Hacka chokladen och blanda i mosad banan och choklad.

9. Pour the batter into the spring form. / Häll i smeten i formen.

10. Freeze for 5 hours or longer. / Frys i 5 timmar eller mer.

11. Top of with berries. / Toppa med bär.

12. Done! / Klart!

Dark Chocolate Fudge with Seasalt – Mörk Choklad Fudge med Havssalt

Here’s a recipe that takes you no more than 30 min and is PERFECT for your Christmas dessert table (maybe that’s just in Sweden, but perfect for dessert anyway…). This fudge only requires a few ingredients and is hard to fail when doing! Try it yourself.

Recipe / Recept 

1.25 cups of sugar / 3 dl socker 

1.25 cups of heavy whipping cream / 3 dl grädde

0.4 cups of light corn syrup / 1 dl ljus sirap 

2 tbsp of cacao powder / 2 msk kakao

1 dark (70% or higher) chocolate bar / 1 mörk (70% eller högre) chokladkaka

50 g of butter / 50 g smör

1 tsp of salt / 1 tsk salt

sea salt for sprinkling / havssalt för strössel

1. Bring sugar, cream, syrup and cacao powder to boil. / Koka upp socker, grädde, sirap och kakao.

2. Boil until thickened, this varies in time, but about 20 min. Try if it’s ready by dripping down some of the batter into a glas with ice cold water, if you can shape the batter – it’s ready. If not – let it boil for longer. / Koka tills smeten tjocknat, det kan ta olika lång tid, men ca 20 min. Prova om den är klar genom att droppa ner lite smet i ett glas med iskallt vatten. Om du kan forma smeten, är den klar – om inte, låt den fortsätta koka.

3. Remove from heat. Stir in chopped chocolate, salt and butter. / Ta bort från värmen, rör i hackad choklad, salt och smör.

4. Pour into a brownie pan with parchment paper. / Häll i en ugnsform med bakplåtspapper.

5. Sprinkle with salt. / Toppa med salt.

6. Let cool in the fridge. / Låt svalna i kylen.

7. Cut in pieces. / Skär i bitar.

8. Done! / Klart!

Lemon Sticky Cake with Lime Frosting – Citron Kladdkaka med Lime Frosting

Sometimes, the world just calls for something pretty. I have a weird love for icing bags, and icing things in general. It’s one of my favorite things about baking, and I oftentimes try making something that can be iced (I’ve heard you can make cookies with an icing bag?!). However, I’ve lately seen multiple recipes circling around the blog sphere of Lemon Sticky Cake, basically a lemonbar without the crust. I’ve been wanting to try, but haven’t gotten around too. So, the other day when I realized I had a couple of lemons left that needed to be used before going bad, I was thrilled. And surprised. Wow, this cake was SO easy to make (honestly) and highly appreciated. As much as I love chocolate, it is nice to sometimes be able to switch it up, and this cake will definitely become my go to. But then, I realized, there was nothing to ice. So, I made a lime, cream cheese frosting to decorate it with, and used that as a substitute for serving it with whipped cream. I then went a little crazy with different sprinkles I found, just because sometimes you just need a cake that makes you happy. Again, there are multiple recipes on this cake – here’s my version. Enjoy!

Recipe / Recept

Cake / Kaka

3 small lemons / 3 små citroner

3 eggs / 3 ägg

1.5 sticks of butter / 150 gram smör

0.8 cups of flour / 2 dl mjöl

1.2 cups of sugar / 3 dl socker

1 tsp vanilla / 1 tsk vaniljsocker

Frosting / Frosting

1/2 cup heavy whipping cream / 0.75 dl vispgrädde

1 package of light cream cheese / 1 paket cream cheese light

1 cup icing sugar / 2.5 dl florsocker

3 limes, peel and juice / 3 lime, skal och saft

0.5 tsp vanilla / 0.5 tsk vaniljsocker

1. Preheat the over to 340 F. / Sätt ugnen på 175 grader.

2. Peel and juice the lemons. / Riv skalet och pressa saften från citronerna.

3. Melt the butter. / Smält smöret.

4. Remove from the heat. / Ta bort från plattan.

5. Mix in all other ingredients. / Blanda i alla andra ingredienser.

6. Bake in a spring form. / Grädda i en form med löstagbara kanter.

7. Bake for about 20 min. / Grädda ca 20 min.

8. Let cool. / Låt svalna.

9. Whisk the cream for the frosting. / Vispa grädden till frostingen.

10. Mix in all other ingredients. / Blanda i alla andra ingredienser.

11. Ice the cake. / Frosta kakan.

12. Done! / Klart!

The day of Swedish Chocolate Cake – Kladdkakans Dag

So, apparently it’s “kladdkakans” dag in Sweden tomorrow. A kladdkaka is a very gooey- brownielike chocolate cake that most Swedes can make without a recipe…. Still, there are so many variations of a kladdkaka and a fun cake to experiment with. On the blog, I’ve had multiple recipes and post variating my Kladdkaka, here’s a few for inspiration:

Mini Meringue Tart – Mini Maräng Bakelse

For those of you who’s been with me for a while, you know that I love meringues… It’s just something about them that I love. This is a suggestion of a perfect, simple and delicious dessert. Instead of making the meringues small and high, they can be made as the bottom for a little tart. This is something that is easy and looks very cute – but it doesn’t take the full time of a pavlova. You would make a normal meringue batter, and then top it off with whipped cream and raspberries, or any other berries for that matter.

Recipe / Recept 

3 eggs / 3 ägg 

0.8 cups of sugar / 2 dl socker

5 lemon juice drops / 5 droppar citron juice

1. Preheat the oven to 250 F. / Sätt ugnen på 125 grader.

2. Separate egg whites from yolks. It’s super important that there’s no yolk with the whites. / Separera äggvitor från ägg gulor, viktigt att ingen gula hamnar med vitan!

3. Beat the egg whites with a mixer until firm. You should be able to turn the bowl upside down. / Vispa äggvitorna till ett hårt skum. Du ska kunna vända bunken upp och ner.

4. Carefully pour in the sugar, keep whisking. / Häll försiktigt i sockret, vispa undertiden.

5. Carefully pour in the lemon juice. / Häll försiktigt i citronen.

6. Use an icing bag to create the meringue bottoms on a non stick paper. / Använd en sprits och spritsa ut maräng plattor på ett bakplåtspapper.

7. Bake for about 35 min. Turn the oven off and let the meringues bake in the after heat. / Grädda i ca 35 min, stäng av ugnen och låt marängerna gräddas i efter värmen.

8. Let cool completely. / Låt svalna.

9. Top with whipped cream and berries. / Toppa med vispad grädde och bär.

10. Done! / Klart!

Mini Apple Pies w. Cinnamon & Cardamom Boiled Apples – Små Äppelpajer med Kanel & Kardemumma kokta Äpplen

Recipe (makes 8 small pies) / Recept (8 små pajer)

Bottom dough / Botten deg

3 tbsp of butter / 3 msk smör

2.5 tbsp of flour / 2.5 msk mjöl

1 tbsp sugar / 1 msk socker

Top dough / Top deg 

3 tbsp of butter / 3 msk smör

2.5 tbsp of old fashioned rolled oats / 2.5 msk havregryn

1 tbsp sugar / 1 msk socker

Apples / Äpplen 

2 apples / 2 äpplen

1.5 tsp cardamom / 1.5 tsk kardemumma

1.5 tsp of cinnamon / 1.5 tsk kanel

1 tsp of sugar / 1 tsk socker

1 tsp syrup / 1 tsk sirap

1 tbsp of butter / 1 msk smör

1. Start by preheating the oven to 400. / Sätt ugnen på 200 grader.

2. Cut the apples in small pieces. / Skär äpplena i små bitar.

3. Put the apples and all apple ingredients in a pot. / Lägg äpplen och alla äpple ingredienser i en kastrull.

4. Bring to boil, reduce heat and cook for about 7-10 min. / Koka upp, skruva ner värmen och låt puttra i ca 7-10 min.

5. Mix all the ingredients to the bottom dough. / Blanda alla ingredienser till under-degen.

6. Push out in aluminum molds in a muffin thin. / Tryck ut i botten på aluminiumformar i en muffinplåt.

7. Fill up with apples. / Fyll på med äpplen.

8. Mix all ingredients to the top dough. / Blanda alla ingredienser till topp degen.

9. Spread the crumbles on top of the apples. / Bred ut smulorna på toppen av äpplena.

10. Bake for about 15 min or until golden. / Grädda i ca 15 min eller tills gyllene.

Addicting Banana & Nutella Muffins – Beroendeframkallande Banan och Nutella Muffins

These Muffins. I don’t even know how to explain them. First of all, the MUFFIN. I’m not usually a huge fan to be honest, I feel like muffins can be kind of dull. But these…. Are moist, not to sweet, bananay and just delicious! And then comes the frosting….. Which I found on Sally’s Baking Addiction and slightly modified, was a DREAM. in combination…. Unresistibly, deliciously addicting banana and nutella muffins. A must try.

Recipe / Recept 

Muffins 

2/3 cups of butter / 75 g smör 

1.5 cups of flour / 3 dl mjöl

3 bananas / 3 bananer

1 egg / 1 ägg

3/4 cups of sugar / ca 2 dl socker 

2 tsp of baking powder / 2 tsk bakpulver

a little salt / lite salt 

Frosting 

1.5 sticks of butter / 150 g smör

2 cups of powdered sugar / 5 dl florsocker 

4 large tbsp of nutella / 4 stora msk nutella 

4 tbsp of milk / 4 msk mjölk

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter. / Smält smöret.

3. Mash the banana. / Mosa bananen.

4. Mix all the ingredients together. / Blanda alla ingredienser.

5. Bake in the oven for about 20 min or until a little golden. / Grädda i ugnen i ca 20 min, eller tills gyllene.

6. Let cool. / Låt svalna.

7. Whisk the butter for the frosting fluffy. / Vispa smöret till frostingen fluffigt.

8. Mix in the sugar. / Vispa i sockret.

9. Whisk in the nutella. / Vispa i nutellan.

10. Whisk in the milk. /  Vispa i mjölken.

Fläderblom är en utav mina favorit sommar-smaker. Det är fräscht och gott. Den här cheesecaken bjöd jag på under en tjejmiddag, och det fanns knappt något kvar efteråt… Den är god, syrlig och ett perfekt slut på en middag.

Elderflower is something very Swedish, and one of my favorite flavors during summer. It’s fresh and just wonderful. This cheesecake was the desert during a dinner with my girlfriends, and there was barley anything left after… It tastes delicious, it’s a little sour and a perfect ending to a dinner. P.S Elderflower concentrate can be bought at IKEA.

Recept / Recipe

För skalet /For the crust:

2 dl cornflakes / 0.8 cups of cornflakes

2 dl rågflingor / 0.8 cups of rye-flakes

1 dl vetemjöl / 0.4 cups of flour

100 g smör / 3.5 ounces of butter

1 dl mörkt muscadavo socker / 0.4 cups of dark muscovado sugar 

Fyllning/ Filling:

4 Gelatinblad / 4 Gelatin leaves

250 g kesella / 8.8 ounces of curd

250 g vaniljkesella / 8.8 ounces of Vanilla curd

4 dl crème fraiche / 1.6 cups of sour cream

2 dl fläderblomssaft (koncentrerad) /  0.8 cups of Elderflower concentrate

1.5 dl florsocker / 0.6 cups of icing sugar

1/2 citron, saft och skal / 1/2 lemon, juice and peel

Garnering / Garnish

Färska jordgubbar / Fresh strawberries 

1. Sätt ugnen på 200 grader, mixa alla ingredienser till skalet i en mixer, tryck ut i en form med löstagbara kanter. / Heat the oven to 390 Fahrenheit, mix all the ingredients to the crust in a mixer and put in a thin with removable edges.

2. Ställ i ugnen i 10 min. Låt svalna. / Bake in the oven for 10 min. Let cool.

3. Blötlägg gelatinbladen i kallt vatten i 5 min. / Let the gelatin leaves soak in cold water for 5 min.

4. Koka ihop alla ingredienser ,utom gelatinbladen, till fyllningen i en kastrull, vispa tills den är slät. / Boil all ingrediens for the filling together, except the gelatin leaves, in a pot, whisk until even.

5. Låt gelatinbladen smälta in i blandningen under omrörning. / Let the gelatin leaves melt into the mix while whisking lightly.

5. Låt svalna, häll över pajskalet och låt stå i kylen i minst 4 h innan servering. Garnera med jordgubbar. / Let cool, pour over the crust and put the cheesecake in the fridge for at least 4 h before serving. Garnish with fresh strawberries.

Homemade Chocolate Sauce for “Maräng Swiss” – Hemgjord Chokladsås till Marängswiss

In Sweden, one of our classic desserts (that I’ve written about before) is called “maräng swiss” it basically translates into “Meringue swiss”. The debate is how to pronounce the “swiss” is it like swiss, schwiss, schwish or something else? The one thing that’s for certain is that the dessert includes cream, ice cream, bananas, meringues and chocolate sauce. The chocolate sauce (or should I say syrup) that is store bought is not able to compete with making warm, homemade chocolate sauce! So here comes my best recipe – and please try this dessert…. You will love it!

Recipe / Recept

0.8 cups of cream / 2 dl grädde

0.4 cups of sugar / 1 dl socker

0.4 cups of syrup / 1 dl sirap 

5 tbsp of cacao powder / 5 msk kakao 

1 tsp of butter / 1 tsk smör

1. Put everything in a pot with a thick bottom. / Lägg allt i en kastrull med tjock botten.

2. Bring to boil. / Koka upp.

3. Let simmer for about 10 min or until desired texture. / Låt puttra i ca 10 min, eller tills den blivit så tjock som du vill.

4. Done! / Klart!

Absolute Best Chocolate Mousse – Absolut Bästa Choklad Moussen

Here comes a recipe on the absolute best chocolate mousse. It’s not healthy or light, it’s rich, thick and chocolaty! A chocolate lovers dream and a decadent dessert for any dinner.

Recipe / Recept

1.5 cups of heavy cream / 4 dl vispgrädde

4 egg yolks / 4 äggulor

1.5 dark 70% chocolate bars / 1.5 70% chokladkaka

2 tbsp of butter / 2 msk smör

2 tbsp of cocoa powder / 2 msk kakao

2 tbsp of sugar / 2 msk socker

1. Whisk the cream. / Vispa grädden.

2. Melt the chocolate together with the butter. / Smält chokladen tillsammans med smöret.

3. Separate the egg whites from the yolks. / Separera gulorna från vitorna.

4. Stir in the sugar and cocoa powder to the chocolate mix. / Rör i socker och kakao i den smälta chokladen.

5. Stir in the egg yolks in the chocolate mixture. / Rör i ägg-gulorna i choklad blandningen.

6. Fold the chocolate mixture into the cream. / Vik in chokladblandningen i grädden.

7. Pour in to glasses or molds and put in the fridge for about 4 hours before serving. / Häll upp i glas och kyl i ca 4 timmar innan servering.

8. Done! / Klart!
