My Guacamole – Min Guacamole

Guacamole is one of those side dishes that I love, and believe goes with almost anything (maybe because I’m the huge avocado fan I am). Guacamole can be made in a thousand ways, but this is my fresh, fast, 3 ingredient guacamole recipe. If you wanna make your guacamole a little in advance, you can use the seeds from the avocados and put them on the top. This will make the guacamole stay green and fresh and not turn brown as fast!

Recipe / Recept

2 avocados / 2 avokados

1/2 red onion / 1/2 rödlök

2 tbsp of lime juice / 2 msk lime saft

salt and pepper / salt och peppar

1. Start by mashing the avocados. / Börja med att mosa avokadon.

2. Finely chop the onion. / Hacka löken fint.

3. Mix together limejuice, avocado, onion and salt and pepper. / Blanda ihop limesaft, avokado, lök, salt och peppar.

4. Done! / Klart!

In Sweden, there’s a concept of having a taco-friday. It is just what it sounds like, tacos for dinner on fridays. The Swedish Mexican cuisine scene is not at all that developed. We usually use ground beef for the tacos and top them off with very friendly (i.e mild) toppings. If you are Swedish and wanna spice your taco friday up, try quesadillas. If you aren’t Swedish but love Mexican food, here’s a recipe for you too!

Here’s a fun way to make homemade Quesadillas; In the waffle maker! Maybe not what you would’ve thought of at first, but it’s both practical and delicious! There are no particular ingredient amounts to this recipe – it depends on how many you are making, but this was what I put on mine. Serve with your favorite toppings, salsa, guacamole, sour cream or whatever you feel like!

Tortilla breads / Tortilla bröd

Mushrooms / Champinjoner

Garlic / Vitlök

Salsa / Salsa

Red onion /  Röd lök

Cheese / Ost

Red pepper / röd paprika

1. Start by heating the waffle maker. / Hetta upp våffeljärnet.

2. Slice the mushrooms, sauté in butter with garlic. / Skiva champinjonerna, stek i smör tillsammans med vitlök.

3. Spread your toppings on one tortilla bread. / Strö ut dina toppings på ett tortilla bröd.

4. Finish of with a second bread. / Toppa med ett till bröd.

5. Cook in the waffle maker until the cheese is melted. / Grädda i våffeljärnet tills osten har smält.

6. Cut in slices. / Skär i bitar.

7. Serve with your favorite toppings. / Servera med dina favorit toppings.

8. Done! / Klart!

Cooling Watermelon Mango Slush – Vattenmelon & Mango Slush

In Sweden we’ve been enjoying a fantastic month of July. The weather’s been amazing, and there’s no doubt this summer will be remembered as hot and sunny. In the heat, anything cold is delicious, and anything hot is a no-go. For me, this especially holds true in the mornings. Why? Because I hate sleeping in the heat and waking up warm. Therefore, I’ve been elaborating with breakfasts that can cool me down, and this slush is one of them. Of course, it would be delicious as a snack och dessert too.

Recipe / Recept

2 cups of frozen watermelon / 5 dl frusen vattenmelon

1 banana / 1 banan

1 mango / 1 mango

lime juice / lime saft

1. Blend everything together. / Mixa allt tillsammans.

2. Serve immediately. / Servera direkt.

3. Done! / Klart!
