Chocolate and Banana Chia Pudding – Choklad och Banan Chia Pudding

Lots of Snack Hacks lately, and as fun as it is…. Some normal recipes are about to come. First out is this easy banana and chocolate chia pudding! It’s a perfect dessert, and is both gluten and lactose free! Make sure you don’t put the chia puddings too far back in your fridge, since it might make them freeze.

Recipe (2 servings) / Recept (2 portioner)

1 banana / 1 banan

0.75 cups of chia seeds / 2 dl chia frön 

1 cup of coconut milk / 2.5 dl kokosmjölk 

1 tbsp of cacao powder / 1 msk kakao 

Dark chocolate & raspberries for garnish / Mörk choklad och hallon till topping

1. Mash the banana. / Mosa bananen.

2. Split the chia seeds equally in two glasses. / Dela upp chiafrön i två glas.

3. Mix together the banana, milk and cacao powder. / Blanda samman banan, mjölk och kakao.

4. Pour over the chia seeds. / Häll blandningen över chiafrön.

5. Mix and put in the fridge for at least two hours. / Blanda och ställ i kylen i minst 2 timmar.

6. Garnish with dark chocolate flakes and raspberries. / Toppa med skivad mörk choklad och hallon.

7. Done! / Klart!

Snack Hacks: Easiest 1-min Banana Ice Cream

Recipe / Recept 

2 bananas / 2 bananer 

1 tbsp of peanut butter / 1 msk jordnötssmör

raw cacao nibs / råa kakao nibs 

1. Cut up the bananas and freeze for at least 4 hours or over night. / Skär upp bananerna och frys i minst 4 timmar eller över natten.

2. In a food processor, mix the bananas with peanut butter until ice cream consistency. / I en mixer, mixa bananer med jordnötssmör tills det blir glass konsistens.

3. Top with cacao nibs. / Toppa med kakao nibs.

4. Enjoy!!

Banana & Chocolate Cheesecake – Banan & Choklad Cheesecake

I don’t make a lot of cheesecakes, mostly because of my own impatience, and the slightly longer cooking times. Although, my friend Samantha made a cheesecake a couple of weekends ago, and I got inspired (because it was so good) to make one as well! I altered the recipe slightly by adding one egg since I don’t bake with corn starch. I added some chocolate powder to the crust, and banana to the filling, and it came out to be delicious! Try it yourself!

Recipe / Recept 

1.5 cups of crushed graham crackers / 6.25 dl smulor av grahams kex 

1 stick of butter / 113 g smör 

2 tbsp of cocoa powder / 2 msk kakao

1 tbsp of sugar + 0.8 cups / 1 msk socker + 2 dl

2 pounds of cream cheese / 900 g cream cheese

3 eggs / 3 ägg

1 tsp vanilla / 1 tsk vaniljsocker 

1 cup of light sour cream / 2.5 dl lätt creme fraiche 

2 bananas / 2 bananer 

1. Start by pre heating the oven to 450F. / Sätt ugnen på 250 grader.

2. Melt the butter and mix with the cookie crumbles as well as the cacao powder and 1 tbsp sugar. / Smält smöret och blanda med kaksmulorna, kakaon och socker.

3. Press out in a round baking pan. / Tryck ut i en rund spring form.

4. Let chill in freezer. / Låt kylas i frysen.

5. Mix sugar, eggs, sour cream, vanilla and cream cheese together. / Vispa ihop socker, ägg, creme fraiche, vaniljsocker och cream cheese.

6. Set aside one third of the batter. / Lägg en tredjedel av smeten i en annan skål.

7. Whisk in the two bananas in the bigger batter. / Vispa i två bananer i den större smeten.

8. Spread the banana batter on top of the crust, and the plain batter on top of the banana batter. / Bred på banansmeten på botten, och den vanliga smeten på banan smeten.

9. Bake for 10 min, then decrease the heat to 200 F and bake for 50 more min. / Grädda i 10 min, sänk värmen till 90 eller 100 grader och grädda ytterligare 50/45 min.

10. Take out and let cool. / Ta ut och låt svalna.

11. Keep in the fridge. / Låt stå i kylen.

Gluten-Free Banana & Coconut Cake – Glutenfri Banan & Kokos Kaka

I’m not gluten-intolerant, and despite the trend that’s ongoing, I don’t believe that the path to a perfect life is eliminating gluten. But I do agree that gluten-free options makes you (oftentimes) feel less “panic-full” and creates a lighter option. What I do think is fun is experimenting when baking, and gluten free baking, to make it taste good, and not be raw, can be a challenge! My best trick is bananas, just because they add so much moist to the cake and makes it less prone to become dry! Coconut flower is another great component that can be used as a substitute of flower, and, of course eggs. The thing with this cake is that is has a quite strong taste of both coconut as well as banana, just so you know!

Recipe / Recept 

3 eggs / 3 ägg 

3 ripened bananas / 3 mogna bananer

1 cup of coconut flour / 2.5 dl kokosmjöl 

0.2 cups of sugar / 0.5 dl socker

50 g of butter / 50 g smör 

chopped walnuts (optional) / hackade valnötter (kan uteslutas)

1 tsp cinnamon / 1 tsk kanel

1 tsp of cardamom / 1 tsk kardemumma

1.Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Mash the bananas. / Mosa bananerna.

3. Melt the butter. / Smält smöret.

4. Blanda alla ingredienser. / Mix all the ingredients.

5. Grease a baking thin. / Smöra en form.

6. Bake the cake for about 35-40 min, or until golden. / Grädda i ca 35-40 min, eller tills gyllene.

Vegan Mint Ice Cream – Vegansk Mintglass

My favorite flavor of ice cream has always been mint. The kind you would buy in store is a lot of times white, but if you make it yourself, it’s always bright green! I love that it is so colorful, because it makes it appealing both visually and when you taste it. This vegan ice cream is super easy to make… If you have a good blender. Make sure to freeze the bananas at least 6 hours ahead, in order to get the most like ice cream texture.

Recipe (4) / Recept (4)

5 frozen bananas / 5 frozen bananas

2 plants of fresh mint / 2 krukor färsk mynta 

2 avocados / 2 avokados

1 small bag of fresh spinach / 1 liten påse bladspenat 

Chocolate for topping / Choklad till topping

1. Put everything in a mixer, mix until smooth (it will happen, just be patient.). / Lägg allt i en mixer och mixa tills glassen blivit slät (det tar lite tid, ha tålamod.).

2. Serve immediately and sprinkle with dark chocolate. / Servera direkt och toppa med choklad.

Pancakes with Bananas – Pannkakor med Banan

So this really was an experiment, but it turned out well. Pancakes comes in so many shapes, forms, flavors and ingredients. My favorites (as mentioned a million times) are the classic banana pancakes. But – sometimes there’s a clear carb-craving that can only be satisfied by real flour pancakes. Although, I still love the flavor of banana, therefore, I tried switching some of the flour for mashed banana, and it turned out delicious and VERY filling. Try it our next time you’re making pancakes for breakfast!

Recipe / Recept

0.5 cups of flour / 1.25 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver

2 tbsp of sugar / 2 msk socker

a pinch of salt / en nypa salt

1 cup of milk / 2.5 dl mjölk

1 egg / 1 ägg

2 mashed bananas / 2 mosade bananer

1. Mash the banana. / Mosa bananen.

2. Mix all ingredients together. / Blanda alla ingredienser samman.

3. Heat a pan with butter. / Hetta upp en panna med smör.

4. Make small pancakes, when they bubble, flip. / Gör små pannkakor, när dom bubblar, vänd.

Banana & Chocolate Semifreddo – Semifreddo med smak av Banan & Choklad

This semifreddo is one of the easiest desserts to make! The base only calls for three ingredients. Into this batter I mixed in 4 bananans and a half dark chocolate bar, and made a chocolate crust. Topped with raspberries and strawberries the result was delicious! If you’re not too fond of banana, you can really mix anything you like into the batter – whatever you like will work!

Recipe / Recept

Crust / Botten

1 package of double chocolate chip cookies / 1 paket chokladkakor

1 stick of butter / 100 g smör

Batter / Smet

2 cups of whipping cream / 5 dl grädde

3 egg whiter / 3 äggvitor

0.8 cups of sugar / 2 dl socker

4 bananas / 4 bananer

1/2 dark chocolate bar / 1/2 mörk chokladkaka

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Mix cookies and melted butter. / Mixa kakor och smält smör.

3. Push the dough out into a spring form. / Pressa ut degen i en springform.

4. Bake for 8 min. / Grädda i 8 min.

5. Whisk the egg whites to a hard foam. / Vispa äggvitorna till ett hårt skum.

6. Whisk the cream. / Vispa grädden.

7. Mix egg whites, cream and sugar. / Blanda ägg, grädde och socker.

8. Chop the chocolate and mix in mashed bananas and chocolate. / Hacka chokladen och blanda i mosad banan och choklad.

9. Pour the batter into the spring form. / Häll i smeten i formen.

10. Freeze for 5 hours or longer. / Frys i 5 timmar eller mer.

11. Top of with berries. / Toppa med bär.

Addicting Banana & Nutella Muffins – Beroendeframkallande Banan och Nutella Muffins

These Muffins. I don’t even know how to explain them. First of all, the MUFFIN. I’m not usually a huge fan to be honest, I feel like muffins can be kind of dull. But these…. Are moist, not to sweet, bananay and just delicious! And then comes the frosting….. Which I found on Sally’s Baking Addiction and slightly modified, was a DREAM. in combination…. Unresistibly, deliciously addicting banana and nutella muffins. A must try.

Recipe / Recept 

Muffins 

2/3 cups of butter / 75 g smör 

1.5 cups of flour / 3 dl mjöl

3 bananas / 3 bananer

1 egg / 1 ägg

3/4 cups of sugar / ca 2 dl socker 

2 tsp of baking powder / 2 tsk bakpulver

a little salt / lite salt 

Frosting 

1.5 sticks of butter / 150 g smör

2 cups of powdered sugar / 5 dl florsocker 

4 large tbsp of nutella / 4 stora msk nutella 

4 tbsp of milk / 4 msk mjölk

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter. / Smält smöret.

3. Mash the banana. / Mosa bananen.

4. Mix all the ingredients together. / Blanda alla ingredienser.

5. Bake in the oven for about 20 min or until a little golden. / Grädda i ugnen i ca 20 min, eller tills gyllene.

6. Let cool. / Låt svalna.

7. Whisk the butter for the frosting fluffy. / Vispa smöret till frostingen fluffigt.

8. Mix in the sugar. / Vispa i sockret.

9. Whisk in the nutella. / Vispa i nutellan.

10. Whisk in the milk. /  Vispa i mjölken.

Mango, Mint & Banana Smoothie – Mango, Mynta & Banan Smoothie

about 8-10 pieces of frozen mango / ca 8-10 bitar frusen mango

1 banana / 1 banan

about 10 menthe leaves / ca 10 små mynta blad

about 0.4 cups of coconut water / ca 1 dl kokosvatten

2 tsp of yoghurt (optional) / 2 tsk yoghurt (kan uteslutas)

1. Blend all ingredients together until smooth and creamy. / Mixa alla ingredienser tills len och krämig i konsistensen.
