The Prettiest Chocolate Chip Cupcakes with Raspberry Frosting – Dom Finaste Chocolate Chip Cupcakesen med Hallonfrosting

There’s no prettier time in DC than during Cherry Blossoms. I think it’s partly because of the nature, but partly because DC is an outdoors city, and the Cherry Blossoms usually marks the first days of spring. Everyone is outside and there are flowers everywhere. In our backyard, we also have a huge magnolia tree. In combination, all the trees and their flowers create somewhat of a wonderland. When I baked that weekend, I didn’t wanna make anything else than something pink, so that set the tone. The frosting is colored with raspberries, but can of course be colored with anything. I’m throwing in some DC photos so you can see where my inspiration comes from. Happy Baking!

Recipe / Recept 

Muffins 

2 cups of flour / 5 dl mjöl

1/3 cup of brown sugar / 0.8 dl muscavadosocker

1/3 cup white sugar / 0.8 dl vanligt socker

2 tsp of baking powder / 2 tsk bakpulver

1/2 tsp of salt / 1/2 tsk salt

2/3 cups of milk / 1.6 dl mjölk

1/2 cup of melted butter / 55 g smör, smält

3 eggs / 3 ägg

1 tsp of vanilla / 1 tsk vaniljsocker

Frosting

3/4 cups of butter / 170 g smör

3 cups of icing sugar / 7.5 dl florsocker

2 tbsp of milk / 2 msk mjölk

1-2 tsp of vanilla extract / 1-2 tsk vaniljsocker

2.5 cups of frozen, defrosted raspberries / 5 dl frusna, tinade hallon

1. Preheat the oven to 400 F. / Sätt ugnen på 200 grader.

2. Mix eggs and sugars until fluffy. / Vispa ägg och socker tills det är fluffigt.

3. Mix all dry ingredients except the chocolate chips. / Blanda alla torra ingredienser utom chokladen.

4. Mix in the flour mix into the egg mix carefully. / Blanda i mjölblandningen i äggblandningen försiktigt.

5. Add the melted butter and milk. / Blanda i det smälta smöret och mjölken.

6. Carefully stir in the chocolate chips. / Blanda försiktigt i chokladen.

7. Bake in muffin molds for about 12 min or until golden. / Grädda i muffinsformar i ca 12 min, eller tills gyllene.

8. Let cool. / Låt svalna.

9. Let the butter for the frosting be soft but not melted. / Låt smöret till frostingen vara mjukt men inte smält.

10. Add in the icing sugar. / Vispa i florsockret.

11. Carefully whisk in the milk. / Vispa försiktigt i mjölken.

12. Add everything else. / Lägg i allt annat.

13. Frost the cupcakes. / Frosta cupcakesen.

14. Done! / Klart!

Chocolate Chocolate Chip & Peppermint Cookies – Choklad & Chocolate Chip Mint Cookies

For everyone who knows me, they also know my love for mint chocolate. I guess just mint in general actually. I love mint, and I always have. So let’s move on to the cookies! These cookies are DELICIOUS, no doubt on that either. The recipe is the classic Nestlé recipe, with a couple of adjustments, making it all yummy. What I did, which actually turned out really well, was taking out the cookies a little early, so they became soft instead of crispy. I then kept them in the fridge, and it all worked out really well. I hope you try!

Recipe / Recept

1 cup, 2 sticks of butter / 230 gram smör 

2.25 cups of flour / 5.75 dl mjöl

1 tsp of baking soda / 1 tsk bikarbonat

1 tsp of salt / 1 tsk salt 

0.75 cups of sugar / 1.9 dl socker

0.75 cups of brown sugar / 1.9 dl muscavadosocker 

1 tsp of vanilla / 1 tsk vaniljsocker 

2 eggs / 2 ägg

1.5 cups of chocolate chips / ca 4 dl chocolate chips 

3 tbsp of cacao powder / 3 msk kakao

1 tbsp of peppermint extract / 1 tsk pepparmintsextrakt 

1. Heat the oven to 375 F. / Sätt ugnen på 190 grader.

2. Mix butter, sugar and eggs. / Blanda smör, socker och ägg.

3. Add in flour, baking soda, salt and vanilla. / Blanda i mjöl, bikarbonat, salt och vaniljsocker.

4. Add in cacao and peppermint. / Blanda i kakao och mintextrakt.

5. Mix in the chocolate chips. / Blanda i chocolate chipsen.

6. Put in the fridge for about 10 min. / Sätt i kylen i ca 10 min.

7. Spread out small balls of dough on a parchment paper on a baking sheet. / Sprid ut små bollar av deg på ett bakplåtspapper på en plåt.

8. Cook for about 10 min, let cool. / Grädda i ca 10 min, låt svalna.

9. Done! / Klart!

Jordnöts och Choklad Kakor – Chocolate Chip and Peanut Butter Cookies

Recept / Recipe

5 och 1/3 dl mjöl / 2 and 1/4 cup of flour

1/2 tsk bikarbonat / 1/2 tsp of baking soda

220 g smör / 2 sticks of butter

1.2 dl socker / 1/2 cup of sugar

2.5 dl farin socker / 1 cup of brown sugar

1 tsk salt / 1 tsp of salt

1 tsk vanilj socker / 2 tsp of vanilla extract

2 ägg / 2 eggs

2 dl chokladknappar / 0.8 cups of chocolate chips

1 msk jordnötssmör / 1 tbsp of peanut butter

1. Sätt ugnen på 175 grader. / Heat the oven to 350 F.

2. Se till att smöret är mjukt (antingen rumstemperatur eller smält lite i micron.). Vispa smör, socker och farinsocker. / Make sure that the butter is soft, whisk sugars and butter together.

3. Blanda i alla andra ingredienser utom jordnötssmör och chokladknappar. / Mix in all other ingredients except from peanut butter and chocolate chips.

4. Rör sedan i chocklad och jordnötssmör. / Then carefully add peanut butter and chocolate chips.

5. Rulla till bollar lägg på en plåt med bakplåtspapper. / Roll small balls and put on a baking thin with a non stick paper.

6. Grädda i ca 10 min, eller tills bruna i kanterna. / Bake for about 10 min, or until golden around the edges.

7. Låt svalna. / Let cool.

8. Klart! / Done!

Gudomliga Chocolate Chip Cookies – Perfect Chocolate Chip Cookies

Alltså, jag har egentligen inte ens gillat kakor eller cookies förrän jag flyttade till DC, men någonstans längs vägen i brist på smågodis så blev just chocolate chip cookies något som kunde stilla mitt sug efter socker. Men jag tycker ändå ofta när man köper dom att dom är för torra eller för spröda. Jag tycker att cookies ska vara mjuka och lite mindre i storlek. Detta recept hittade jag på recept.nu men var egentligen en bas till ett bakverk, så jag gjorde om receptet en aning. Smeten eller degen beskrevs av min bror som en av de godaste kakdegarna någonsin, och jag kan inte säga att det färdiga resultatet blev sämre…. / Seriously, I haven’t even enjoyed cookies until I moved to DC, somewhere along the way, where Swedish candy was missing, chocolate chip cookies could fulfill my need of sugar. Even though I like cookies now, I often get disappointed when I buy them. Their too dry and not moist at all. I believe cookies should be chewy and a little smaller (when it comes to size). This recipe I found on a Swedish (!) website, but it was only the base for a larger pastry. So, I modified the recipe a little. The result of just the dough was described as “the best cookie dough ever” by my brother, and I really must say the result was absolutely perfect…

Recept / Recipe

100 g smör / 3.5 ounces of butter

1 dl socker / 0.4 cups of sugar

2 msk ljus sirap / 2 tbsp of light syrup

2.5 dl mjöl / 1 cup of flour

1 tsk vanilj socker / 1 tsp of vanilla extract

0.5 tsk bikarbonat / 0.5 tsp of baking soda

1 ägg / 1 egg

1 dl mörka choklad knappar eller hackad choklad / 0.4 cups of dark semi-sweet chocolate chips

1. Sätt ugnen på 175 grader. / Heat the oven to 350 Fahrenheit.

2. Blanda smör, socker och sirap. Du kan vispa med degkrokar. / Mix butter, sugar and syrup. You can use a mixer that’s made for doughs.

3. Bland mjöl, vaniljsocker och bikarbonat. Tillsätt till smörsmeten. / Mix flour, vanilla sugar and baking soda. Add to the buttermix.

4. Tillsätt ägget. / Add the egg.

5. Blanda väl, du kan även nu använda degkrokar. / Mix well, you may use the dough mixer.

6. Blanda i choklad knapparna. / Add the chocolate chips.

7. Rulla bollar av drygt 1 tsk deg. Lägg dom på en plåt med bakplåtspapper, inte för tätt! / Roll the dough in small balls, with a little more than 1 tsp of dough. Put them on a baking sheet with a non stick paper. Don’t place it them too close.

8. Grädda i ca 11 min. / Bake for about 11 min.

9. Äntligen klart! / Finally done!
