Easy & Delicious Chips & Caviar Snacks – Lätta & Goda Chips & Rom Snacks


It’s a little strange because here in the US “caviar” is such a delicacy, not to say it’s not a little “luxurious” in Sweden, but it’s not the same thing. These chips are perfect for a cocktail party or just as a nice weekend appetizer! Quick and easy to make, and something that any salt-lover will like! This recipe will go under a new category called “Phone Recipes” meaning that they are usually quicker, and photos are taken with my phone, we’ll see how it turns out, let me know what you think!

What you need: / Du behöver:

Lightly salted chips / Lättsaltade lantchips 

1 small red onion / 1 liten rödlök 

sour cream / creme fraiche 

caviar / rom 

fresh dill / färsk dill 

1.Chop the onion in small, small pieces. / Finhacka löken.

2. Spread out the chips. / Sprid ut chipsen.

3. Put a little bit of sour cream, followed by onion and caviar on them. / Lägg på lite creme fraiche, lök och rom.

4. Top with dill. / Toppa med dill.

5. Done! / Klart!


6 Hour Bolognese – 6 Timmars Bolognese


Something that I’ve been wanting to do for a really long time is a slow cooked bolognese. I don’t own a slow-cooker, so I just made mine in a pot. When I’m in DC, I usually don’t have 6 hours to wait for something cooking (even though it does cook itself and you don’t have to do much, I would still not dare leaving it on the stove….). When I got back to Sweden, this was the first meal I made! And I must say…. There is something about slow cooked meat. It just falls apart, and it tastes SO delicious. As you all know, I don’t eat that much red meat any longer, but this is one of my few weak points. For all of you out there who feel like trying – do it! It was worth it, and especially for a weekend with bad weather, or when you’re on vacation.

Recipe / Recept

600 g chuck roast / 600 g högrev 

5 carrots / 5 morötter 

2 onions / 2 gula lökar 

4 cloves of garlic / 4 vitlöksklyftor 

4 mushrooms / 4 champinjoner

1/2 parsnip / 1/2 palsternacka 

3 sticks of celery / 3 stjälkar selleri 

2 cans of crushed tomatoes / 2 burkar krossade tomater 

1 cup of water / 2.5 dl vatten

1 stock cube / 1 buljong tärning

1 tbsp soy sauce / 1 msk soya 

1 tbsp salt / 1 msk salt 

1 tbsp sugar / 1 tsk socker

Parsley for garnish / Persilja för dekoration 

1. Start by cutting the meat and vegetables in pieces. / Börja med att skära kött och grönsaker i bitar.

2. Brown the meat in butter. Set aside. / Bryn köttet i smör. Lägg åt sidan.

3. In a big pot, brown the vegetables. / I en stor gryta, bryn grönsakerna.

4. Add all the other ingredients and let simmer with the lid on. / Lägg i alla ingredienser och låt puttra med locket på.

5. After about 1 hour, taste and add more spices according to taste. / Efter ungefär en timme, smaka av och krydda.

6. Let simmer and try every 2 hours. / Låt puttra och smaka av efter ca 2 timmar.

7. After 5-6 hours, it’s done. / Efter 5-6 timmar är det klart.

8. Serve with pasta and parmesan. / Servera med pasta och parmesan.

Banana Nut Bread from Pepstop – Banan och Nötbröd från Pepstop


This post is more geared toward my Swedish readers, since it’s opened a new vegan shop in Stockholm; Pepstop! Me and my Mom passed by the other day, and bought a mix for banana nut bread. You mixed it with some kind of nut milk (I used almond) and then let the batter swell. After that, you put it in the little mold that it came with (this was really cute) and baked it! We ate ours with butter and jam. It was really good, but, a little too rich for my taste. Maybe it was the nuts? Nonetheless, it was a great idea, and I liked the concept.



The Greatest Cake of All Times – Den Bästa Tårtan genom Alla Tider


There are a couple of things that never gets old. One of those things, is this cake. It has a soft sponge layered with banana and raspberries, covered in whipped cream and topped of with whatever’s in season. This time; raspberries.

Recept / Recipe

Botten (Går också att köpa färdiga) / Sponge

2 ägg / 2 eggs

2 dl socker / 0.8 cups of sugar

3 dl vetemjöl / 1.4 cups of flour

2 tsk bakpulver / 2 teaspoons of baking powder

2 tsk vaniljsocker / 2 teaspoons of vanilla sugar

1 dl mjölk / 0.4 cups of milk

50 g smält smör / 1.75 ounces of butter

Fyllning / Filling 

2 bananer / 2 bananas

200 g hallon / 7 ounces of raspberries


3 dl vispgrädde / 1.4 cups of whipping cream

bär till garnering / berries for garnishing

1. Sätt ugnen på 175 grader. / Heat the oven to 350 Fahrenheit.

2. Vispa ägg och socker pösigt med elvisp. / Whisk egg and sugar until light yellow with a mixer.

3. Tillsätt alla torra ingredienser. / Add all the dry ingredients.

4. Lägg i en rund form, helst med löstagbara kanter och grädda i ca 40-50 min, stick i kakan för att se att den är klar. / Put the mixture in a preferably round baking thin with removable edges. Bake the cake for about 40-50 min, stick something in the cake to make sure it’s done.

5. Låt svalna och skär i tre lager. / Let cool and cut it in three layers.

6. Mosa banan och hallon separat. Ha lite socker i om du vill. / Mash banana and raspberries separately  Add some sugar if you want.

7. Vispa grädden ganska hårt. / Whisk the cream pretty hard.

8. Lägg en tårtbotten på ett fat, och lägg på mosad banan. Lägg på nästa lager och lägg på mosade hallon. Lägg på nästa lager och täck in hela tårtan i vispgrädde. / Put one layer cake on a plate and put the mashed banana on top. Put another layer of cake on top and put the mashed raspberries on top. Add the third layer of cake and cover it all in cream.

9. Garnera med färska bär! / Garnish with fresh berries!

10. Klart! / Done!



Delicious Blueberry Buckle


It’s been a really rainy summer in Sweden. And cold. There’s been a couple of nice days, but overall, I must say 2015 has been quite bad when it comes to weather. But there’s something good that comes with every bad, and in this case it’s the blueberries! They love the rain, and there’s so many bushes just filled with berries. Yesterday, I therefore baked this blueberry buckle. For everyone that’s tired of blueberry muffins or pies. Delicious, not to sweet, and really easy to make.

Recipe / Recept

Batter / Smet

150 g butter / 150 g smör

2 egg / 2 ägg

1.2 cups of sugar / 3 dl socker

3 tsp vanilla extract / 3 tsk vaniljsocker

2 tsp baking powder / 2 tsk bakpulver 

1.6 cups of flour / 4 dl mjöl 

0.4 cups of greek yoghurt / 1 dl turkisk eller grekisk yoghurt

Filling / Fyllning

1 tbsp potato flour / 1 msk potatismjöl 

blueberries (about 3.2 cups) / Blåbär (ca 8 dl)

Crumble / Smulor

120 g butter / 120 g smör 

0.4 cups of flour / 1 dl mjöl

0.8 cups of oats / 2 dl havregryn

4 tbsp of coconut flakes / 4 msk kokosflingor 

2 tbsp cinnamon / 2 msk kanel 

a pinch of salt / en nypa salt 

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter. / Smält smöret.

3. Whisk the eggs and sugar together. / Vispa ägg och socker.

4. Mix all ingredients together. / Vispa ihop alla ingredienser.

5. Grease and bread a pan. / Smöra och bröa en form.

6. Spread half the batter in the pan. / Bred halva smeten i formen.

7. Spread the blueberries and powder the potato flour. / Bred ut blåbären och strö över potatismjölet.

8. Spread the rest of the batter. / Bred på resten av smeten.

9. Mix together the crumble. / Blanda ihop smulorna.

10. Spread on top. / Strö ut på toppen.

11. Bake for about 45 min. / Grädda i ca 45 min.

12. Let cool. / Låt svalna.

13. Done! / Klart!



Chocolate and Vanilla Dream Swiss Roll – Dröm Rulltårta


For those of you who follow my instagram, you know I baked a swiss roll about 2 weeks ago. As a child, this was probably one of my favorite pastries. It’s a fluffy chocolate cake and a vanilla cream filling. It’s a little tricky to make it stay together, but very quick and easy to make!

Recipe / Recept

Cake / Botten

3 eggs / 3 ägg

0.6 cups of sugar / 1.5 dl socker

0.3 cups of potato flour / 0.75 dl potatismjöl

2 tbsp of cacao powder / 2 msk kakao

1 tsp baking powder / 1 tsk bakpulver

some sugar / lite socker

Filling / Fyllning

7/8 stick of butter / 100 g smör

0.8 cups of icing sugar / 2 dl florsocker

2 tsp of vanilla / 2 tsk vaniljsocker

1 egg yolk / 1 ägg gula


1. Preheat the oven to 480 F. / Sätt ugnen på 250 grader.

2. Whisk egg and sugar together until fluffy. / Vispa ägg och socker fluffigt.

3. Add in all other ingredients carefully. / Blanda i alla andra ingredienser försiktigt.

4. On a lined baking sheet, spread out the batter. / På en plåt med bakplåtspapper, sprid ut smeten.

5. Bake for 6 min. / Grädda i 6 min.

6. Prepare another baking sheet with sugar on. / Förbered ett annat bakplåtspapper strött med socker.

7. As soon as the cake comes out, flip it over on the sugared sheet. / Så snabbt kakan kommer ut, vänd ner den på det sockrade pappret.

8. Carefully peel of the baking sheet. / Dra försiktigt bort bakplåtspappret.

9. Let cool. / Låt svalna.

10. Whisk together all ingredients for the filling. / Vispa ihop alla ingredienser till fyllning.

11. Spread on the cake. / Bred på botten.

12. Roll together with the baking sheet as your help. / Rulla ihop med hjälp av bakplåtspapper.

13. Cut in pieces. / Skär i skivor.

Seared Tuna & Caramelized Onion Rice Bowl


This recipe has been waiting and waiting to be posted! Don’t be intimidated… It’s so easy to make, and one of the most delicious dinner I’ve made in a while… Which means that you must try as well :). You could just as well use fresh salmon or another type of fish. The combination is what makes it so perfect!

Recipe / Recept 

Rice / Ris

1 mango / 1 mango

1 avocado / 1 avokado 

1/2 cucumber / 1/2 gurka 

1 large onion / 1 stor lök 

1/2 cup of water / 1.25 dl vatten

2 tbsp of honey / 2 msk honung

salt / salt

2 pieces of tuna (that can be eaten raw…) / 2 bitar tonfisk (som kan ätas råa

2 cloves of garlic / 2 vitlöksklyftor

Dressing / Dressing 

1 part olive oil / 1 del olivolja 

1 part soy sauce / 1 del soya 

a piece of fresh ginger / en bit färsk ingefära 


1. Start by boiling the rice according. / Börja med att koka riset.

2. Cut the cucumber and avocado in smaller pieces. Mix and set aside. / Skär gurkan och avokadon i mindre bitar. Blanda och ställ åt sidan.

3. Cut the mango in smaller pieces and set aside. / Skär mangon i mindre bitar och sätt åt sidan.

4. Cut the onion in half moons. / Skär löken i halvmånar.

5. Heat up a pan and add onion, stir until it’s soft. / Hetta upp en panna och lägg i löken. Rör tills den är mjuk.

6. Add water, honey and salt. / Lägg i vatten, honung och salt.

7. Turn the heat down. / Dra ner värmen.

8. Let simmer until all liquid is disappeared. / Låt puttra tills all vätska kokat bort.

9. Grate the ginger. / Riv ingefära.

10. Mix all ingredients to the dressing. / Blanda alla ingredienser till dressingen.

11. Press the garlic. / Pressa vitlöken.

12. Rub the tuna in garlic and salt, sear in butter on high heat for about 45 sec on each side. / Gnugga in vitlöken i tonfisken och salta. Stek på hög värme i smör ca 45 sek på varje sida.

13. Layer the bowl with rice, dressing, vegetables and top with slices of tuna and caramelized onion. / Lägg upp i en skål, ris underst och sen grönsaker och dressing. Toppa med skivad tonfisk och karamelliserad lök.

14. Done! / Klart!


3×3 Checkerboard Cookies – 3×3 Schackrutor


This post is a tribute to my Mom, no doubt. She loves these cookies, and is originally the master of making them as well. Although, I’ve always wanted to make them 3×3 instead of the original 2×2. What is important when making these cookies is that there’s no air between the rolls of dough, if there is, the cookies will crack and fall apart. In order to prevent that from happening, just make sure you squeeze the rolls together carefully. All in all, I think they turned out great, and they look much more “worked” than the original one’s, even though they are so simple. The cookies are prefect to freeze and bring out when you get that cookie craving!

Recipe / Recept

2 cups of flour / 5 dl mjöl

0.4 cups of sugar / 1 dl socker

7 ounces of butter / 200 g smör

2 tbsp of cacao powder / 2 msk kakao

1 tsp of vanilla extract / 1 tsk vaniljsocker

1. Preheat the oven to 390 F. / Sätt ugnen på 200 grader.

2. Put all ingredients in a food processor except the vanilla sugar and cacao powder . Split the dough in two. Mix the vanilla sugar in half, and the cacao powder into the other half. If the dough is very loose, put in some more flour, or put in the fridge for about an hour. / Lägg alla ingredienser i en mixer, utom kakaon och vanilj sockret. Dela degen i två och tillsätt vaniljsocker i den ena, och kakao i den andra. Om degen är väldigt lös och kladdig kan du antingen tillsätta mer mjöl, eller ställa den i kylen i ungefär en timme.

3. Split both the doughs in smaller, equally big pieces. Roll out in long strings all equally thick. You will need 4 of one dough and five of the other. Put one vanilla sting in the middle of a chocolate dough string, in the next layer, do the opposite, and the top layer the same as the bottom layer. / Dela båda degarna igen. Rulla ut dom i långa rullar, alla delar ska vara lika tjocka.Lägg sedan en vanilj deg i mitten av en choklad deg, och motsatt i nästa lager, och samma som understa lagret på det översta lagret.

4. Cut the cookies in about 1-2 cm slices, and bake in the oven for 5-7 min, when they get a tiny bit of color on the sides, take them out, let cool. / Skär kakorna i ca 1-2 cm skivor, grädda i ugnen i ca 5-7 min. När de fått liiite färg på sidorna, ta ut dom och låt dom svalna.

Shrimp & Shiitake Dumplings – Dumplings med Räkor och Shiitake fyllning


Yesterday it was time for dumplings again, and I must say that it went much better than my previous attempts (here and here). These dumplings were made with two different fillings, Shiitake mushroom, garlic and scallion, and shrimp, scallions and peanuts. I steamed these in two ways, some of them in a real steamer (easiest) the other one’s I put on a spatula and held it over boiling water with a lid on… Both ways worked, so don’t be discouraged if you don’t have a steamer :). The past times I’ve made dumplings I’ve made them as small bags, but this time I folded the dough across, into a triangle, and then folded the other corners in and tightened, so that they became squares (you can see what they looked like from the pictures). All in all a very successful dinner.

Recipe / Recept 

Dumpling dough (got mine at whole foods) / Dumpling deg (kan tänka mig att det finns på asiatiska matvarubutiker) 

Shiitake filling / Shiitake fyllning

5 shiitake mushrooms / 5 shiitake svampar

6 baby scallions / 6 bebis salladslökar 

2 cloves of garlic / 2 vitlöksklyftor

1 tbsp of soy / 1 msk soya 

Shrimp & Peanut filling / Fyllning med Räkor och Jordnötter

about 0.8 ounces of shrimp / ca 400 g räkor

6 baby scallions / 6 bebis salladslökar 

1 tsp of peanut butter / 1 tsk jordnötssmör 

1 tsp of hoisin sauce / 1 tsk hoisinsås

about 2 tbsp of chopped peanuts / ca 2 msk hackade jordnötter

1. Start by cutting the mushrooms and scallions into small pieces. / Börja med att hacka svamparna och lökarna i små bitar.

2. Heat a frying pan, sauté the mushrooms, scallions and crushed garlic. Add soy. / Hetta upp en stekpanna, stek svamp, lök, och pressad vitlök. Lägg i soya.

4. Set filling one aside. / Ställ den första fyllningen åt sidan.

5. Cut the shrimp and scallions into small pieces. / Hacka räkor och lök.

6. Sauté together with peanut butter and hoisin sauce, add the chopped peanuts at the end. / Stek tillsammans med jordnötssmör och hoisinsås, lägg i de hackade jordnötterna på slutet.

7. Fold the dumplings by adding about a teaspoon of filling in the middle, watering the edges and then folding across into a triangle, holding the top tight and then folding in the corners to the middle, creating a square. / Vik ihop dumplings genom att lägga ca 1 tsk fyllning i mitten, blöt kanterna med vatten. Sedan viker du degen rakt över så att du får en triangel, håll i toppen och vik in kanterna till en kvadrat och täpp till kanterna.

8. Steam the dumplings for about 3 min. / Ånga i ca 3 min.

9. Done! / Klart!



Spinned Saffron Buns filled with Vanilla, Pistachios and Cranberries – Snurrade Saffransbullar fyllda med Vanilj, Pistagenötter & Tranbär


These are the winning saffron buns of all years. They turned out moist, delicious and pretty. If you haven’t tried making saffron buns before you have to do it now – nothing tastes or smells more delicious. Happy Baking!

Recipe / Recept

1 g of saffron / 2 paket saffran

2 cups of milk / 5 dl mjölk

2 envelops of yeast / 50 g jäst

200 g smör / 200 g smör

1 egg/ 1 ägg

0.5 tsp of salt / 0.5 tsk salt

1.4 cups of sugar / 3 dl socker

about 8 cups of flour / ca 20 dl mjöl 

Filling / Fyllning

Butter / Smör 

Sugar / Socker

Vanilla extract / vaniljsocker 

pistachios / pistagenötter

cranberries / tranbär

1 egg / 1 ägg

This recipe was baked with dry yeast, if using fresh, heat milk to body temp. and dissolve with yeast before adding dry ingredients.

1. Mix 4 cups of flour, sugar, yeast and salt together. / Blanda 10 dl mjöl, socker, jäst och salt tillsammans.

2. Heat milk, saffron and butter. / Värm mjöl, saffran och smör till ca 44 grader.

3. Pour milk mixture over flour mixture. Add the egg. / Häll mjölkblandningen över mjölblandningen. Lägg i ägget.

4. Work the dough and add more flour until the dough doesn’t stick to the walls of the bowl anymore. / Arbeta degen och lägg i mer mjöl tills degen släpper från kanterna av bunken.

5. Let rise for 30 min. / Låt jäsa i 30 min.

6. Mix about 50 g of butter together with 1.5 tbsp of sugar and 1 tsp vanilla. / Blanda ca 50 g smör med 1.5 msk socker och 1 tsk vaniljsocker.

7. Roll out the dough as square as possible. / Kavla ut degen i en fyrkant.

8. Spread butter filling on half the dough, sprinkle with pistachios and cranberries. / Bred ut smörfyllning på halva degen, strö över pistagenötter och tranbär.

9. Fold the un-buttered half over. / Vik över den o-smörade delen.

10. Cut in stripes, and cut the stripes in two but not all the way, looking like a pair of pants. / Skär i strimlor och skär varje strimma i 2 delar, men inte hela vägen, ska se ut som ett par byxor.

11. Spin the legs of the pants and fold in. / Snurra benen på byxorna och vik in.

12. Let rise for another 30 min. / Låt jäsa i ytterligare 3o min.

13. Heat the oven to 440. / Sätt ugnen på 250 grader.

14. Brush the buns with a whipped egg. / Pensla bullarna med ett uppvispat ägg.

15. Bake for about 8 min. / Grädda i ca 8 min.

16. Done! / Klart!
