Super Good & Healthy Fish Burgers – Jättegoda & Nyttiga Fiskhamburgare

When my brother became a vegetarian, I can’t say I was a huge fan of fish… I liked salmon, but mostly I would stick to chicken. However, over the past year, I’ve barely eaten red meat, and not that great amount of chicken. This summer I was craving fish, even when my brother was no longer at home. This resulted in these healthy and delicious fish burgers! They’re easy to make, quick, and delicious. We ate them with a half hamburger bread, two delicious sauces (I’ll provide the recipe to those too) and some oven roasted vegetables. All in all, a successful dinner!

Recipe (4 servings) / Recept (4 portioner)

7 ounces of white fish / 200 g vit fisk

7 ounces of red fish / 200 g röd fisk 

1 egg / 1 ägg

1 boiled potato / 1 kokad potatis 

3 cloves of garlic / 3 vitlöksklyftor 

chili flakes / chiliflakes

salt / salt 

pepper / peppar 

Chive sauce / gräslökssås 

0.8 cups of sour cream / 2 dl crème fraiche 

3 tbsp of chopped chives / 3 msk hackad gräslök 

a hint of lemon juice / lite citronsaft 

salt / salt 

pepper / peppar 

Sweet chili Sauce / Sweetchili Sauce 

0.8 cups of sour cream / 2 dl crème fraiche 

4 tbsp of sweet chili sauce / 4 msk sweet chili sås 

1. Start by boiling the potato. / Koka potatisen.

2. In a food processor, mix all the ingredients for he fishburgers. / I en mixer, mixa alla ingredienser till fiskburgaren.

3. Shape the batter into burgers. / Forma smeten till hamburgare.

4. Fry on low heat. / Stek på svag värme.

5. Mix the ingredients to the sauces. / Blanda ingredienserna till såserna.

6. Done! / Klart!

Couscous Salad with Chili Sautéd Eggplant – Couscous Sallad med Chili Stekt Aubergine

Recipe (Serves 6) / Recept (6 portioner)

4 portions of couscous / 4 portioner couscous 

2 cloves of garlic / 2 vitlöksklyftor

1/2 stock cube / 1/2 buljongtärning

2 tbsp of lemon juice / 2 msk citronsaft

1 tbsp of olive oil / 1 msk olivolja

Sugarsnaps / Ärtskidor 

tomatoes / tomater 

cucumber / gurka 

Broccoli / Broccoli

Eggplant / Aubergine 

Chiliflakes / Chili flakes 

1. Boil the water for the couscous with 2 crushed cloves of garlic, lemon juice, stock cube and olive oil. / Koka upp vatten till couscousen med 2 pressade vitlöksklyftor, citronsaft, buljongtärning och olivolja.

2. Slice all vegetables. / Skiva alla grönsaker.

3. Boil the broccoli lightly. / Koka broccolin lätt.

4. Slice the eggplant thinly. / Skiva auberginen tunt.

5. Add salt and chili flakes onto the eggplant. / Lägg lite salt och chili flakes på aubergine skivorna.

6. Sautée in butter. / Stek i smör.

7. Plate nicely. / Lägg upp fint.

8. Done! / Klart!

Awesome Salmon & Passion fruit Salad with Cilantro Dressing – Fantastisk Lax & Passionsfrukts Sallad med Koriander Dressing

Since the weather in Sweden doesn’t seem to cool off yet (awesome) there’s definitely a need for some quick, easy and delicious salad inspiration recipes. This sallad was so good that me and my brother ate it for lunch 3 days in a row. My brother even said he’d make the dressing the coming days too. The dressing contains a couple of ingredients, but most of it, you’ll find in your pantry at home. It’s really only the fresh cilantro that you will maybe have to purchase. When it comes to presentation, or ingredients for that part, don’t be scared to experiment a little. Put in whatever you like. I used warm smoked salmon, a swedish speciality, but really, any kind of salmon will do. Enjoy your salad, and I hope you try making the delicious dressing.

Recipe (serves 4 hungry people) / Recept (till 4 hungriga personer)

Hearts of Romaine / Roman Sallad

Salmon of any kind / Lax

3 Passion fruits / 3 passionsfrukter

1 spring onion / 1 salladslök

1 avocado / 1 avokado

Pea pods / Ärtskidor

Halloumi cheese / Halloumi ost

Cucumber / Gurka

Dressing / Dressing 

0.4 cups chopped cilantro / 1 dl hackad koriander

Olive oil / Olivolja

Balsamico / Balsamico

Honey / Honung

Soy Sauce / Soya

Chil iflakes / Chiliflakes

1. Start by making the dressing. / Börja med att göra dressingen.

2. Chop the cilantro and put in a small glass. / Hacka koriandern och lägg i ett litet glas.

3. Cover with olive oil. / Täck med olivolja.

4. Add about 0.2 cups of soy. / Tillsätt ca 0.5 dl soya.

5. Add 1 tbsp of honey. / Lägg i 1 msk honung.

6. And then 1 tsp balsamico. / Och sen 1 tsk balsamico.

7. Add chili flakes after flavor. / Tillsätt chiliflakes efter smak.

8. Cut all other ingredients and plate nicely. / Skär alla andra ingredienser och lägg upp fint.

9. Cover with passion fruit and the dressing. / Täck med passionsfrukt och dressing.

10. Done! / Klart!

A whole Grilled CornCob – En hel Grillad Majskolv

For those of you who has been with me for a while know that I love corn (and maybe more so, corncobs). In the summer, I believe it’s one of the best things to put on the grill. But maybe you guys, just like me, has had the issue of the corncob cooking unevenly. Since it’s not as thick all through it can be hard to grill it in a good way. So what to do? Well, don’t be frightened by the pictures – it’s not burnt. But put it on the grill with it’s peel on! Cook until the first layer is black and then flip it, 3 times in total, you’ll have perfectly flavored, perfectly grilled corncobs! Tadaaa.

Recipe / Recept

Just corncobs / Bara majskolvar

1. Heat the grill. / Sätt på grillen.
2. Put the corncobs on. / Lägg på majkolvarna.
3. Grill for about 5 min on each side (4 sides) or until black. / Grilla i ca 5 min på varje sida (4 sidor) eller tills svart.
4. Let cool a little. / Låt svalna lite.
5. Peel. / Skala.
6. Done! / Klart!

A Wonderpot / En “Under-Kastrull”

Pasta comes in many different shapes – yet, I sometimes find it redundant. In the US, tomato sauce just goes by as “red sauce” and it makes me kind of sad. Red sauce and tomato sauce shouldn’t be the same thing, even though it is. The website www.budgetbytes.com is a great resource for any dinner, although it comes more handy for students on a student budget. Pasta rouge is sometimes delicious, but this wonderpot will surprise you! The wonder of the wonderpot simply lies in the fact that you only need one pot to cook the whole meal, even though it’s both pasta and a sauce. Convenient, since it requires less dishes… However, the result isn’t simple or boring at all. It’s
D e l i c i o u s and won’t disappoint you. It’s creamy without cream and flavorful as never before! Try it out and be amazed!

Recipe / Recept 

12 oz of Bavette / 500 g bavette 

3 cloves of garlic / 3 vitlöksklyftor

fresh basil / färsk basilika 

tomatoes / tomater 

1 yellow onion / 1 gul lök

4 cups of water / 1 liter vatten

1 stock cube / 1 buljongtärning

Parmesan cheese / Parmesanost

1. Cut the tomatoes, peel and slice the onion and garlic. / Skär tomaterna i bitar, skala och skiva löken och vitlöken.

2. Break the pasta in two. / Bryt pastan i två.

3. Add all ingredients, except the cheese,  into a pot. / Lägg alla ingredienser, utom osten, i en gryta.

4. Bring to boil, no lid. Make sure everything is covered in water. / Koka upp, utan lock, se till så att allt är täckt av vatten.

5. Cook until the pasta is done. / Koka tills pastan är klar.

6. Grate some cheese and stir in. / Riv ost och rör i.

7. Done! / Klart!

Summery Raspberry Swiss Roll / Somrig Hallon Rulltårta

Easy, fast, delicious and summery.

/

Lätt, snabbt, gott och somrigt.

Recipe / Recept 

3 eggs / 3 ägg

0.6 cups of sugar /1.5 dl socker

0.8 cups of flour / 2 dl mjöl

1 tsp baking powder / 1 tsk bakpulver 

1 tbsp of milk / 1 msk mjölk

1.2 cups of cream / 3 dl grädde

raspberries / hallon

a little sugar / lite socker

1. Heat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Mix sugar and eggs until super light yellow and fluffy. / Vispa ägg och socker tills det är ljusgult och fluffigt.

3. Carefully add in flour and baking powder. Add the milk. / Tillsätt mjöl och bakpulver försiktigt. Tillsätt mjölken.

4. On a baking sheet, on a non stick paper, spread the batter out evenly. / På en plåt med bakplåtspapper, bred ut smeten jämt i en rektangel.

5. Bake for about 5 min, until a little golden. / Grädda i ca 5 min, tills lite gyllene.

6. Sprinkle over sugar when it’s still hot. / Strö på socker när den fortfarande är varm.

7. Add another non stick paper on top. / Lägg på ett till bakplåtspapper på toppen.

8. Flip the cake. / Vänd på kakan.

9. Carefully remove the non stick paper from the top. If it’s stuck, brush on some water and try again. / Dra försiktigt av pappret från toppen. Om det inte lossnar, pensla försiktigt på lite vatten och försök igen.

10. Let cool. / Låt svalna.

11. Whisk the cream. / Vispa grädden.

12. Mash in the raspberries. / Blanda i hallon.

13. Spread on the cake. / Bred på botten.

14. Carefully roll together, use the non stick paper as your help. / Rulla försiktigt ihop, använd bakplåtspapper som hjälp.

15. Cut in slices. / Skär i skivor.

16. Done! / Klart!

Pasta Pesto with Scallops – Pesto Pasta med Pilgrimsmusslor

There’s no summer in Sweden yet, it’s July 2nd and the rain is still poring down. Although, they are promising better weather and especially more summery weather during the weekend. The only good thing about the weather being more like a rainy october day is that there’s lots of time for cooking. This dish is perfect when having guests over, since it’s both hearty, delicious and easy. You can prepare the pesto in advance, and the meal will be done in the same amount of time as the pasta is cooking.

But, let’s talk about scallops for a while. Scallops are sooo delicious, but it’s important to not over cook them. A food like scallops is nothing you eat everyday, and therefore it’s worth being a little more attentive in order to cook them in the right way. Well, the “right” way will probably vary from person to person. My way of cooking them is by seasoning with salt and pepper and then quickly turn them in a pan on high heat with butter in. Only about 1 minute on each side, and then let them rest. Mmm….

12 ounzes of pasta / 500 g pasta

Pesto / Pest0

Avocado / Avokado

Tomatoes / Tomater

Pine nuts / Pinjenötter

Parmesan cheese / Parmesan ost

Scallops / Pilgrimsmusslor

1. Start by making the pesto. / Börja med att göra peston.

2. Cook the pasta. / Koka pastan.

3. Meanwhile, slice the avocado and tomatoes. / Undertiden, skiva avokado och tomater.

4. Sear the scallops; season and put the stove on high heat. Melt butter in a pan and cook about 1 min on each side. / Stek pilgrimsmusslorna; sätt spisen på hög värme och låt smöret smälta. Krydda pilgrimsmusslorna och stek ca 1 min på varje sida.

5. Mix the pasta with the pesto. / Blanda pastan med peston.

6. Top of with tomatoes, avocado, scallops, pine nuts, avocado and parmesan. / Toppa med tomater, avokado, pilgrimsmusslor, pinjenötter och parmesan.

7. Done! / Klart!

Pesto!

Classic pesto is hard to go wrong with. There’s multiple uses for pesto, if you don’t feel like eating it straight up with pasta. You can use it on sandwiches, pizzas, salads and for antipasto. Fresh pesto feels and tastes soooo much better than the store-bought jar. There are probably a thousand variations on how to make pesto, and this is our traditional recipe.

Recipe / Recept

2 small pots of fresh basil / 2 krukor basilika

2 small pots of parsley / 2 krukor persilja 

3 cloves of garlic / 3 vitlöksklyftor

about 0.4 cups of roasted pine nuts / ca 1 dl rostade pinjenötter

about 0.5 cups of parmesan cheese / ca 1.2 dl parmesanost 

Olive oil / olivolja 

1. Start by roasting the pine nuts. Heat a pan and put the nuts in the pan. Stir until golden. / Börja med att rosta pinjenötterna. Hetta upp en panna och lägg i nötterna. Rör om till och med att nötterna blivit gyllene.

2. Cut off all the fresh leaves of herbs from the plants. / Klipp av all färska kryddblad från plantorna.

3. Peel the garlic. Less garlic makes it milder. / Skala vitlöken. Mindre vitlök ger en mildare pesto.

4. Put the herbs, garlic, nuts and cheese in a food processer. / Lägg kryddorna, nötterna, vitlöken och osten i en mixer.

5. Pour in a little olive oil at first, about 2 tbsp. / Häll i lite olja först, ca 2 msk.

6. Start mixing. / Börja mixa.

7. Pour in more olive oil as you go, until you reach your desired texture. / Häll i mer olivolja eftersom, tills du når den konsistens du vill ha.

Asian Fusion Glass Noodle & Shrimp Salad – Asian Fusion Glasnudel & Räksallad

Here comes a recipe you can’t go wrong with. It’s perfect for hot summer nights, as well as a cold lunch. I’ve started to absolutely love glass noodles over the past year. In general when I cook, I usually just use what I come across. Sometimes, I of course plan it all out, but most of the times the recipes are half planned and half made up in the heat of the moment, and I think that’s one of the best parts about cooking. I cooked this dish on a friday night together with my brother and his girlfriend Alexandra. I’m kind of a control freak in the kitchen, yet I love having company when cooking (kind of paradox, I know), but this actually turned out to be a great dinner. I hope you can try something like it too!

Recipe (4-5 people) / Recept (4-5 personer)

2 packets of glass noodles / 2 paket glasnudlar

1 mango / 1 mango

1 avocado / 1 avocado

1 cucumber / 1 gurka

1/2 red onion / 1/2 rödlök

1 packet of pea pods / 1 packet ärtskidor

fresh cilantro / färsk koriander 

fresh mint / färsk mynta

about 2 tbsp olive oil / ca 2 msk olivolja 

about 2 tbsp susaki sauce / ca 2 msk susakisås

about 1 tbsp of soy sauce / ca 1 msk soya

salt / salt 

Shrimp / Räkor

Peanuts / Jordnötter

1. Start by cooking the noodles. When they are done, flush them in cold water. / Börja med att tillaga nudlarna, när de är klara kan du spola i kallt vatten.

2. Chop cilantro and mint. / Hacka mynta och koriander.

3. Mix the herbs with olive oil, susaki and soy sauce. / Blanda kryddorna med olivolja, susaki och soya.

4. Chop all the vegetables. / Skär alla grönsaker.

5. Mix the vegetables with the noodles and the sauce. / Blanda grönsakerna med nudlarna och såsen.

6. Mix in the shrimp. / Blanda i räkorna.

7. Garnish with peanuts. / Garnera med jordnötter.

8. Done! / Klart!
