Snack Hacks: Razz O’Cado Ice Cream

This recipe might be the quickest and easiest Snack Hack yet! Two ingredients and done super fast! The avocado makes the ice cream very creamy, and filling!

Recipe/Recept 

2 avocados / 2 avokados 

1 bag of frozen raspberries / 1 påse frysta hallon

1. In a food processor, mix together avocado and raspberries until creamy. / I en mixer, mixa hallon och avokado krämigt.

Chocolate Mousse Cake Pops – Chokladmousse Cake Pops

I’ve once made cake-pops before, but then I took the easy route with store-bought frosting and pre made cake (yes, it happens 🙂 ). This time, I had made a cake to make mini heart shaped chocolate cookies, but the cake turned out strange in its consistency and I ended up debating to throw it. Then I remembered that I had heart shaped bang molds and chocolate mousse in the frige, so i crumbed the cake up, mixed in the chocolate mousse and after a couple of hours in the fridge, I chocolate dipped the hearts and my cake pops were done!

Recipe / Recept 

3 eggs / 3 ägg 

1 cup of sugar / 2.5 dl socker

2.6 ounces of butter / 75 g smör 

1.4 cups of flour / 3 dl mjöl 

1.5 tsp of baking powder / 1.5 tsk bakpulver

0.3 cups of water / 3/4 dl vatten

3 tbsp of cacao powder / 3 msk kakao 

Chocolate Mousse (This is more than you need, so there will be plenty of leftovers) / Choklad mousse (Det här blir mer än du behöver, så kommer finnas en del kvar)

2 cups of heavy cream / 5 dl grädde 

200 g dark chocolate / 200 g mörk choklad 

1 egg yolk / 1 ägg gula 

Other things needed / Övriga saker

Chocolate for coating / Choklad för doppning

Sprinkles / Strössel

Cake pop sticks / Cake pop pinnar

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Spray a baking mold with non stick spray. / Smöra och bröa en form.

3. Whisk eggs and sugar fluffy. / Vispa ägg och socker fluffigt.

4. Melt the butter. / Smält smöret.

5. Add in butter, flour, vanilla and baking powder to the sugar and egg. / Blanda i smör, mjöl, vaniljsocker och bakpulver i ägget och sockret.

6. Divide the batter in 2 parts. / Dela smeten i två.

7. Mix one with cacao. / Blanda i kakao i den ena.

8. Add in the chocolate chips, white once in the vanilla batter, and dark in the chocolate batter. / Lägg i chokladen, vit i vaniljsmeten och mörk i chokladsmeten.

9. Layer the cake batters in the mold with milk chocolate in between. / Lägg i smeten i lager i formen.

10. Bake for about 35 min. / Grädda i ca 35 min.

11. Whisk the cream until it has a quite thick consistency. / Vispa grädden hårt.

12. Carefully melt the chocolate, remove from heat and add in the egg yolk. / Smält chokladen försiktigt, ta bort från värmen och rör i ägg gulan.

13.  While whisking, add in the chocolate to the cream. / Vispa i chokladen i grädden.

14. Put in the fridge for about 1 hour (preferably more). / Ställ i kylen i ca 1 timme (helst mer).

15. Let the cake cool and make crumbs in a bowl. / Låt kakan svalna och mosa den i en skål.

16. Mix in about 1/2 cup of chocolate mousse (or more depending on consistency). / Blanda i ca 1.5 dl choklad mousse (eller mer beroende på konsistens).

17. Roll balls or divide into molds. / Rulla kulor eller lägg i formar.

18. Freeze for 20 min. / Frys i 20 min.

19. Put in the sticks in the cake pops. / Sätt i pinnarna i cake popsen.

20. Melt chocolate and dip the cake pops. / Smält chokladen och doppa cake popsen.

21. Sprinkle with sprinkles. / Strö på strössel.

20. Done! / Klart!

Homemade Oreos – Hemgjorda Oreos

This reminds me of my best friend Jewelle! She made, a couple of years ago, homemade oreos, and I remember how impressed I was. Yet, oreo cookies has never been a thing in my life, and I think that the oreos that you buy have a quite bland taste, even though that can be desirable from time to time! These oreos are much more chocolaty and tastes more like real chocolate cookies! They are easy to make, but I made a few adjustments to how they “should” be made. Mine are not of a perfect round shape. Why? Because I was way to impatient to chill the dough enough to be able to cut out rounds. I rolled small balls and pressed them out with the palm of my hand instead! Enjoy!

Recipe / Recept 

1.3 cups cocoa powder / 3.1 dl kakao

1.5 cups of flour / 3.75 dl mjöl

0.5 tsp of salt / 0.5 tsk salt 

2 sticks of butter / 230 g smör

1.5 cups of sugar / 3.75 dl socker

2 eggs / 2 ägg

1 tsp vanilla / 1 tsk vanilj 

Filling / Fyllning

1 stick of butter / 115 g smör

2 cups powdered sugar / 5 dl florsocker 

1 tsp vanilla / 1 tsk vaniljsocker

1.Start by mixing flour and cacao powder. / Börja med att blanda kakao och mjöl.

2. Mix together butter, eggs and sugar. / Vispa ihop smör, ägg och socker.

3. Mix all the ingredients. / Blanda alla ingredienser.

4. Chill for 30 min. / Kyl i 30 min.

5. Preheat the oven to 325 F. / Sätt ugnen på 160 grader.

6. Roll out small balls and flatten them with your palm. About the size of a larger teaspoon. / Rulla små bollar och platta ut med din handflata. Storlek av en större tesked.

7. Bake for about 12 min. / Grädda i ca 12 min.

8. Let cool. / Låt svalna.

9. Mix together all the ingredients for the filling. / Blanda samman alla ingredienser till fyllningen.

10. Spread the filling on one cookie and put another one on top. Match the sizes of the cookies if they came out uneven. / Bred på fyllning på en av kakorna och lägg en till ovan på. Matcha storlek på kakorna om dom inte blev helt jämna.

10. Done! Store in the fridge. / Klart! Förvara i kylen!

Super Good & Healthy Fish Burgers – Jättegoda & Nyttiga Fiskhamburgare

When my brother became a vegetarian, I can’t say I was a huge fan of fish… I liked salmon, but mostly I would stick to chicken. However, over the past year, I’ve barely eaten red meat, and not that great amount of chicken. This summer I was craving fish, even when my brother was no longer at home. This resulted in these healthy and delicious fish burgers! They’re easy to make, quick, and delicious. We ate them with a half hamburger bread, two delicious sauces (I’ll provide the recipe to those too) and some oven roasted vegetables. All in all, a successful dinner!

Recipe (4 servings) / Recept (4 portioner)

7 ounces of white fish / 200 g vit fisk

7 ounces of red fish / 200 g röd fisk 

1 egg / 1 ägg

1 boiled potato / 1 kokad potatis 

3 cloves of garlic / 3 vitlöksklyftor 

chili flakes / chiliflakes

salt / salt 

pepper / peppar 

Chive sauce / gräslökssås 

0.8 cups of sour cream / 2 dl crème fraiche 

3 tbsp of chopped chives / 3 msk hackad gräslök 

a hint of lemon juice / lite citronsaft 

salt / salt 

pepper / peppar 

Sweet chili Sauce / Sweetchili Sauce 

0.8 cups of sour cream / 2 dl crème fraiche 

4 tbsp of sweet chili sauce / 4 msk sweet chili sås 

1. Start by boiling the potato. / Koka potatisen.

2. In a food processor, mix all the ingredients for he fishburgers. / I en mixer, mixa alla ingredienser till fiskburgaren.

3. Shape the batter into burgers. / Forma smeten till hamburgare.

4. Fry on low heat. / Stek på svag värme.

5. Mix the ingredients to the sauces. / Blanda ingredienserna till såserna.

6. Done! / Klart!

Homemade Chocolate Sauce for “Maräng Swiss” – Hemgjord Chokladsås till Marängswiss

In Sweden, one of our classic desserts (that I’ve written about before) is called “maräng swiss” it basically translates into “Meringue swiss”. The debate is how to pronounce the “swiss” is it like swiss, schwiss, schwish or something else? The one thing that’s for certain is that the dessert includes cream, ice cream, bananas, meringues and chocolate sauce. The chocolate sauce (or should I say syrup) that is store bought is not able to compete with making warm, homemade chocolate sauce! So here comes my best recipe – and please try this dessert…. You will love it!

Recipe / Recept

0.8 cups of cream / 2 dl grädde

0.4 cups of sugar / 1 dl socker

0.4 cups of syrup / 1 dl sirap 

5 tbsp of cacao powder / 5 msk kakao 

1 tsp of butter / 1 tsk smör

1. Put everything in a pot with a thick bottom. / Lägg allt i en kastrull med tjock botten.

2. Bring to boil. / Koka upp.

3. Let simmer for about 10 min or until desired texture. / Låt puttra i ca 10 min, eller tills den blivit så tjock som du vill.

4. Done! / Klart!

Bernte’s Shrimp Pasta (w. Homemade Fish stock) – Bernte’s Räkpasta (med Hemgjord Fiskbuljong)

My brother’s girlfriend has a dad (Bernte) who is a wonderful cook. For over a year, I’ve been hearing about this shrimp pasta that he made, and how absolutely wonderful it was. The second time my brother arrived from their country house, the pasta had been served again. Bernte was kind enough to share his special recipe – that I’m now sharing with you! Please don’t be intimidated by the ingredients or the time! It’s easy, and you will love it. How cool isn’t it to be able to say that you made your own fish stock?  So here comes this special recipe – I hope you will try it too. And than you, Bernte, for letting me use your recipe.

Recipe/ Recept 

2-3 pounds of shrimp / 1-1.5 kg räkor

1 yellow onion / 1 stor gul lök 

2 carrots / 2 morötter

2 sticks of selleri / 2 stjälkar selleri 

4 garlic cloves / 4 vitlöksklyftor 

2.5 tbsp tomato purée / 2.5 msk tomatpuré

0.8 cups of white whine / 2 dl vitt vin 

vatten / water

salt / salt

1.3 cups of cream / 3 dl grädde

pasta / pasta

parsley / persilja 

parmesan / parmesan

1. Start by peeling the shrimp. Save the peel. / Börja med att skala räkorna. Spara skalet.

2. Chop all the vegetables. / Hacka alla grönsaker.

3. Fry the vegetables in olive oil until softened. / Stek grönsakerna i olivolja tills de mjuknat.

4. Add in the tomato purée. / Lägg i tomatpurén.

5. Add in the shrimp peel, keep stirring. / Lägg i räkskalen, rör om hela tiden.

6. Keep stirring for about 7 min. / Fortsätt röra runt i ca 7 min.

7. Add in the wine. / Lägg i vinet.

8. Cover up with water. / Täck med vatten.

9. Let simmer for 30 min, without lid. / Låt puttra i 30 min, utan lock.

10. Strain away the peel and vegetables through a fine strainer. / Sila bort skal och grönsaker genom en fin sil.

11. Reduce further until about 1.5 cup remains. / Reducera ytterligare tills drygt 3 dl kvarstår.

12. Add in salt. / Lägg i salt.

13. Add the cream and let simmer until creamy. / Lägg i grädden och låt puttra tills såsen blivit krämig.

14. Mix with the pasta. / Blanda med pastan.

15. Serve with the shrimp, parsley, and lots of parmesan. / Servera med räkor, persilja och massor av parmesan.

Homemade Pink Peach Lemonade – Rosa Persiko Lemonad

The weather in Sweden is for once just as you like it during summer. It’s really summer. Yesterday night we had dinner by the ocean in T-shirts until 10 pm, that rarely happens. The days are beautiful and warm with no wind and clear skies… Yesterday I made my one peach lemonade, and it was SO delicious. I wanna try making it with other fruits, but maybe that’s a task for you? 🙂 Use whatever fruits you have at home, and serve this delicious drink in the summer heat. Not to mention, it’s pretty too…

Recipe / Recept

6 cups of water / 1.5 liter vatten

3 peaches / 3 persikor

1.2 cups of sugar / 3 dl socker

4 lemons / 4 citroner

1. Cut the peaches in pieces. / Skär persikorna i bitar.

2. In a big pot, add peaches, water and sugar. / I en stor kastrull, lägg i persikor, vatten och socker.

3. Squeeze in lemon juice. / Pressa i citronsaft.

4. Bring to boil. / Koka upp.

5. Put on a lid and let simmer for 10 min. / Sätt på ett lock och låt puttra i 10 min.

6. Strain the lemonade. / Sila bort persikorna.

7. Let cool. / Låt svalna.

8. Serve with lots of ice! / Servera med massa is!

Pesto!

Classic pesto is hard to go wrong with. There’s multiple uses for pesto, if you don’t feel like eating it straight up with pasta. You can use it on sandwiches, pizzas, salads and for antipasto. Fresh pesto feels and tastes soooo much better than the store-bought jar. There are probably a thousand variations on how to make pesto, and this is our traditional recipe.

Recipe / Recept

2 small pots of fresh basil / 2 krukor basilika

2 small pots of parsley / 2 krukor persilja 

3 cloves of garlic / 3 vitlöksklyftor

about 0.4 cups of roasted pine nuts / ca 1 dl rostade pinjenötter

about 0.5 cups of parmesan cheese / ca 1.2 dl parmesanost 

Olive oil / olivolja 

1. Start by roasting the pine nuts. Heat a pan and put the nuts in the pan. Stir until golden. / Börja med att rosta pinjenötterna. Hetta upp en panna och lägg i nötterna. Rör om till och med att nötterna blivit gyllene.

2. Cut off all the fresh leaves of herbs from the plants. / Klipp av all färska kryddblad från plantorna.

3. Peel the garlic. Less garlic makes it milder. / Skala vitlöken. Mindre vitlök ger en mildare pesto.

4. Put the herbs, garlic, nuts and cheese in a food processer. / Lägg kryddorna, nötterna, vitlöken och osten i en mixer.

5. Pour in a little olive oil at first, about 2 tbsp. / Häll i lite olja först, ca 2 msk.

6. Start mixing. / Börja mixa.

7. Pour in more olive oil as you go, until you reach your desired texture. / Häll i mer olivolja eftersom, tills du når den konsistens du vill ha.

Mini Meringues – Mini Maränger

Something that I just love is meringues. It’s such a cute and good compliment to any dessert. In Sweden, we have a classic dessert called “meringue swish/swiss/suisse” (everyone pronounces it differently). It’s based on ice cream, that’s topped with sliced banana, whipped cream, chocolate sauce and meringues. Then, it’s all swirled together, obviously a complete sugar chock, but also what most people associate with their childhood. These meringues are super easy to make, and perfect if you want to try to make a meringue swiss yourself! They’re crispy on the outside and a little chewy on the inside – exactly how they should be.

Något jag verkligen tycker om är maränger. Det är ett fint och gott komplement till vilken dessert som helst. Något dom inte äter här är maräng swiss, och det är ju bara så himla gott! Dessa maränger passar utmärkt till maräng swiss eller annan dessert, mycket godare än dom man köper! Frasiga på utsidan och sega på insidan – precis som dom ska vara.

Recipe / Recept

0.8 cups of sugar / 2 dl socker

5 lemon juice drops / 5 droppar citron juice

1. Preheat the oven to 250 F. / Sätt ugnen på 125 grader.

2. Separate egg whites from yolks. It’s super important that there’s no yolk with the whites. / Separera äggvitor från ägg gulor, viktigt att ingen gula hamnar med vitan!

3. Beat the egg whites with a mixer until firm. You should be able to turn the bowl upside down. / Vispa äggvitorna till ett hårt skum. Du ska kunna vända bunken upp och ner.

4. Carefully pour in the sugar, keep whisking. / Häll försiktigt i sockret, vispa undertiden.

5. Carefully pour in the lemon juice. / Häll försiktigt i citronen.

6. Use an icing bag to create the meringues on a non stick paper. / Använd en sprits och spritsa ut maränger på ett bakplåtspapper.

7. Bake for about 50 min. Turn the oven off and let the meringues bake in the after heat. / Grädda i ca 50 min, stäng av ugnen och låt marängerna gräddas i eftervärmen.

8. Let cool completely. / Låt svalna.

9. Store in a dry box. / Förvaras torrt.

Very Berry Oatmeal – Bärgröt

I’m always happy when I can find inspiration for new breakfast ideas. Breakfast for me is the most boring meal of the day, even though it’s the most important. On Instagram, someone had made oatmeal with raspberries in them, and I of course had to try. This was really delicious, and a new way to spice up classic oatmeal, which we all know can get boring at times.

Jag blir alltid så glad när jag kan hitta nya idéer för frukost. Frukost för mig är det tråkigaste målet om dagen, även fast det är det viktigaste. Någon hade gjort hallongröt på min instagram, och jag var såklart tvungen att prova. Det blev verkligen supergott och är ett väldigt lätt sätt att göra klassisk gröt lite roligare.

Recipe / Recept 

0.5 cups of rolled oats / 1.2 dl havregryn

0.5 cups of mixed frozen berries / 1.2 dl blandade frysta bär

0.5 cups of water / 1.2 dl vatten

a pinch of salt / en nypa salt

1. Put everything in a pot. / Lägg allt i en kastrull.

2. Bring to boil on low heat while stirring. / Koka upp på låg värme medan du rör.

4. Cook until there’s no water left. / Koka tills det inte finns något vatten kvar.

5. Done! / Klart!
